I swear by Evernote, which not only has a smooth interface for note taking, but keeps everything in the cloud and syncs across devices. You can also save things like web pages, PDFs, pictures, video and audio, AND it gives you an email address so you can email stuff straight into it. Everything is also eminently sortable. Works on iOS, Android, PC, and Mac (and maybe more! That's just what I have personal experience with!)
